My 2nd day of Sourdough: 1st loaf Olive, 2nd loaf Thyme and Cranberry

This was the Olive loaf that was scored once across. This one surprised me as the raw dough puffed up more than the other one throughout the day (I suspect because I had a more airtight pot lid on top of the bowl than the other), but it didn't not rise as much as the Thyme cranberry loaf in the oven because I only scored it once. This Olive loaf poofed up half the size in comparison to the Cranberry Thyme that was scored twice. 
This one was the Thyme Cranberry. I scored it twice (across opposite directions in a cross shape). It was absolutely perfect in terms of fluffiness and the flavors complimented each other well. The only complaint was that I did not push the cranberries fully inside the dough so when I overcooked it a little bit to make it extra crispy, the cranberries on the outside got a little burnt and gave a burnt taste when you got one.

*I also learned today that leaving the loaves on the counter until fully cool helps create a crunchy crust which is delightful.
